250g rolled oats
3 tbsp golden syrup
140g light brown sugar
50g honey seeds – Munchy Seeds
85g walnut pieces
25g dried cranberries
85g sultanas or raisins
50g dried apricots, finely chopped
Gently heat the sugar, golden syrup and butter in a pan until the sugar and butter have melted.
Add the oats, raisins, walnuts, Honey Munchy Seeds and cranberries, mixing well until all the ingredients are coated.
Spoon half the ‘oaty’ mix into a tin (23 x 23cm or thereabouts).
Scatter the fine chopped apricots over the top, then top with the remaining ‘oat’ mix.
Pack the mix down well and smooth with the back of a metal spoon.
Bake for 35 mins at 160′ (or until dark golden).
Leave to cool completely before cutting into 16 bars with a sharp knife.
