A quick healthy Mediterranean dish adapted originally from a Jamie Oliver recipe. Our children love Halloumi and will eat it with any vegetable or salad leaf plonked in front of them – ta dah … result!
50g Munchy Seeds (any of our savoury or spicy range will do)
250g halloumi cheese, cut into 1cm slices
1/2 bag of baby spinach
1/2 bag of watercress
1 bulb fennel, trimmed and halved
100g fresh peas, podded (or frozen quickly bring to the boil)
100g baby tomatoes, sliced in half
Creamy salad dressing (eg Pizza Express, House dressing)
Salt and pepper to taste
Cut the halved fennel bulb into super fine slices. Place in a bowl with the spinach, watercress, baby tomatoes and peas.
Place your halloumi in a really hot frying pan or griddle, with a little olive oil and give the slices a minute or so on each side. The cheese will soften slightly as it cooks.
Dress your salad with either, a good sharp creamy salad dressing or squeeze the juice from a lemon directly over the salad, and drizzle with about twice as much virgin olive oil, adding a pinch of salt and pepper. Toss to coat everything in the dressing.
To serve, tear the pieces of halloumi over the salad and sprinkle with savoury roasted Munchy Seeds and a little sea salt.
Tip: If you can’t get hold of any halloumi, tear cold, cream mozzarella over the top instead.
