Treat your loved one to fluffy heart pancakes with juicy raspberries this Valentines Day! Give your partner the best breakfast in bed or simply serve as a special desert after dinner. A combination of fresh fluffy pancakes served with our very own Honey Roasted Seeds and juicy raspberries. Delicious!
50g Honey Roasted Seeds
50g caster sugar
70g plain flour
1/2 tsp salt
1/2 tsp baking powder
1/2 tsp bicarbonate of soda
25g butter, melted
1 egg (beaten)
1 to 2 tsp of rape seed oil or butter (for gently frying the pancakes in)
200g raspberries, cut in half
Rich chocolate sauce and whipped cream for garnish
Blitz the Honey Roasted Munchy Seeds in a blender until they resembles fine bread crumbs. Add them to the rest of the dry ingredients. Gradually fold in the milk, beaten egg and melted butter to the dry mixture to create a smooth batter.
Heat a little rape seed oil (or butter) in the frying pan on a medium low heat. If you are using a heart shaped cutter, spray with non stick spray or rub a thin layer of oil on it to stop the batter from sticking.
Place your heart shaped cutter in the frying pan. Pour about 2 tbsp of batter into the cutter. Otherwise create your own heart shape into the pan.
Immediately pop a few halved raspberries on top of the heart and leave it to gently cook until small bubbles appear on the surface. Slowly remove the cutter, then flip over. Repeat, until all the batter and raspberries have been used up.
To make it mega indulgent, why not serve with a rich hot chocolate sauce and a good dollop of whipped cream and a sprinkle of Honey Roasted Seeds? Yes… we know that’s a lot, but lets treat our loved ones this valentine’s day!!
