Begin by making your vinaigrette mixing together your mustard, honey, and lemon juice. Once combined stream in your oil and season to taste.
To a pan over low heat add your walnuts and toast for 2-3 minutes. Once toasted roughly chop and set aside. Slice your goat’s cheese into wheels and place in a baking dish. Grill for 3 minutes to caramelise your cheese. Dress your salad with the vinaigrette and top with the fresh figs, goats cheese walnuts, and a sprinkle of seeds.
