Enjoy these simple, soft and chewy granola bars, a perfect mix of oats, seeds, coconut and berries packed into easy to make, delicious snack sized treats. These granola bars are so much better for you than the ones you’ll find in supermarket stores. Feel free to add in your favourite dried fruits, nuts or Munchy Seeds to the mix.
Makes 15 granola squares
75 g chopped almonds
250 g rolled oats
40 g Salted Caramel seeds
100 g runny honey
6 tablespoons almond butter
10 Medjool dates, pitted
30 g bran flakes
1 tsp of cinnamon
1/2 cup of unsweetened coconut flakes or shredded coconut
50 g dried mixed blueberries and cranberries
Preheat your oven to 180ºC/350ºF/gas 4. Grease your baking tin approx. 22cm square with butter.
Put the oats, pre- chopped almonds and Salted Caramel seeds into the tin and mix together. Cook for 10 minutes or until golden.
In a pan heat the honey and almond butter in a pan on a low heat. Whilst you are waiting add the Medjool dates to a blender with 100ml of water and blitz.
Add the date mixture to the honey and almond butter and gently stir. Leave to cool.
Transfer the cooked oats, seeds and almonds into a large mixing bowl. Add the bran, coconut and cinnamon and stir. Then add the dried fruits, chop the pieces in half if required. Add the honey mixture and stir well.
Spoon the mixture evenly into the baking tin and bake for 15 minutes or until golden brown.
Take the baking tin out of the oven and leave to cool for a few minutes. Turn it upside down onto a wooden board and cut into squares. Leave to cool for another 15 minutes before tucking into these delicious homemade treats.
Store in a plastic container and consume within 3 days.
