Chicken and Seeded Coleslaw
A super easy, healthy and delicious Mid-Week Menu idea is this chicken and seeded coleslaw combo! Chicken is a great source of low-fat protein, and adding some Omega or Sesame Sprinkles to your coleslaw is a fantastic way to add extra goodness.
- 4 boneless skinless chicken breasts
- 1 lemon (juice and zest)
- 1/4 whole red cabbage
- 1/4 whole green cabbage
- 3 whole rainbow carrots (or regular orange ones)
- 1/2 a broccoli (sliced)
- 1 large red apple, diced
- 2 tablespoons of mayonnaise
- Generous sprinkle of Omega Sprinkles and/or Sesame Sprinkles
Preheat your oven to 200 degrees C.
Season the chicken breasts with olive oil, half(ish) of the lemon juice, salt and pepper and bake on an oven tray until cooked and no longer pink in the middle. Once removed from the over grate lemon zest over and set aside to cool.
Shred the red and green cabbage finely and add to a large bowl.
Peel the carrots, half them and then slice them finely, add to the cabbage.
Add the broccoli and diced apples to the bowl.
Add mayonnaise, rest of the lemon juice and seeds to the salad and gently toss to coat everything well. Serve immediately.
